Breakfast Of Champions

Its no lie that breakfast is the most import meal of the day. So when pregnant this couldn't get anymore real.

Balance is key. I don't follow any special diets nor am I vegetarian or vegan, but I do love nutrient packed meals, and I'm trying to focus on this even more so now that I'm growing a whole human.
This is my favourite breakfast at the moment and this usually follows my early morning cereal and fruit. Yes , that's right. Two breakfasts. My appetite in the morning is peak.





Ingredients
2 organic eggs
1 ripe avocado
Wholemeal bread
Packet of cherry tomatoes
Streaky unsmoked bacon
Salt, Pepper & Olive oil to season

Method
This is so easy. It's basically just putting everything together. However , my best friend gave THE BEST poached egg cheat ever. So I will share. This will change your life... you can thank me later!
Fill a coffee mug halfway with water
Crack in an egg
Cover the mug with a side plate
Microwave it for 1 minute. Check with a spoon , if still too runny microwave for another 30 seconds and check again. Time will differ with different microwaves!

DISCLAIMER - don't forget to cover the mug or it will explode in your microwave. Nothing worse than cleaning up eggy water from the inside of your microwave. It smells

While your doing this , grill or fry your bacon. Toast your bread. Slice your tomatoes. Cut and dice the avocado.
When both eggs and bacon are cooked (fully if your pregnant) arrange it all together on a plate and season with salt, pepper and olive oil!

Nutritionally this is a well balanced , filling and tasty breakfast for a pregnant women. Eggs are s source of incredible nutrients which make them a superfood. They possess necessary nutrients in the forms of fats, minerals, protein, vitamins A & D which are all essential for a pregnant women. Just make sure they're cooked well. Avocados are another pregnancy superfoods. Containing good fats and tons of vitamins like E , K , C , B6 & B5 and potassium, carotenoids, magnesium and tons of folate. Which we all know is essential in pregnancy. Some people find they can also help with nausea, so eating them for breakfast will help get them through the day. This is scientifically thought to be because of the amount of vitamin B6. Tomatoes have a rich content of vitamin A and iron which is healthy for mum and baby. Okay , so bacon is not exactly healthy or nutritious for that matter. But it tastes so good so I recon it's good for the soul ;)
